Paula Deen's Monster Cookies
I think they are called Monster because this recipe makes so many!
from Christmas with Paula Deen available at the local library :-)
 
 
6 eggs
One 1 pound package light brown sugar (2 1/2 cups packed)
2 cups granulated sugar
1/2 tsp salt
1/2 tsp vanilla
One 24 oz jar creamy peanut butter
1 cup (2 sticks) butter, softened
8 oz M & Ms
8 oz choc. chips (2/3 of a 12 oz bag)
1/2 cup raisins - OPTIONAL - I did not opt in on them
4 tsp baking soda
9 cups quick cooking oatmeal - not instant
 
1. Preheat oven to 350.  Line cookie sheet with parchment paper or nonstick baking mats.
2. In a VERY LARGE mixing bowl, combine eggs and sugars.  Mix well.  Add the salt, vanilla, peanut butter, and butter.  Mix well.  Stir in the M & Ms, chocolate chips, raisins (if using), baking soda and oatmeal (you may need to use your hands at some point with this).
3. Drop by Tablespoonfuls, 2 inches apart, onto the prepared cookies sheets.  Bake for 8 to 10 minutes.  Do not overbake.  Let stand for about 3 minutes before transferring to wire racks to cool.  When cool, store in large resealable plastic bags.
 
NOTE - I used the medium Pampered Chef scoop to make mine and got over 10 dozen cookies.  Paula's recipe says that is makes 6 dozen cookies.  Oh, and the dough is super yummy too!  :-)
